My Scalloped Corn

Ever since reading about Caitlin’s Corn Casserole, I have been craving our family’s version…something we like to call SCALLOPED CORN.

This is probably hands-down one of the easiest yet tastiest side dishes you could make or bring for any dinner. (Besides a can of Pilsbury Crescent Rolls).

Preheat oven to 350*.

Grease a casserole dish.

Mix together:

~1 stick of melted butter

~1 can of creamed corn (not drained)

~1 can of corn kernels (not drained)

~2 eggs, beaten

~1 package of Jiffy Corn Muffin Mix

~1 Cup of sour cream

Bake in greased casserole dish until center comes out clean when knife inserted. (Approximately 1 hour but keep an eye on it!)

YUMMMM! Tonight my scalloped corn was served with some Stovetop Stuffing, squash, mashed potatoes and turkey burger. I topped the turkey burger with Wegmans Cranberry Orange Chutney.


What more can you ask for on Halloween than a Thanksgiving-inspired meal? A scary movie of course! I’m off to watch Halloweensince I never got to it yesterday.
